Weekend Recap: Happy Birthday Joshua

Whew! It has been a busy and crazy last few weeks what with Thanksgiving, preparing for my move, and my Birthday. This past Friday, I took the day off to get even more things checked off my "moving to a new apartment" to do list. It was pouring down rain the WHOLE day, but I still got a lot of things accomplished and even had a chance to take a few random things over to my new space. The big move is this Saturday. I am going to have to be creative with my furniture placement. I am sure it will be the topic of many future blogs. 

Later that evening, I made Josh his favorite dish in honor of his birthday the next day. We were doing a joint celebration on the actual day so I wanted him to feel special/have his own night for at least part of his birthday. I made King Ranch Chicken Casserole and used the Homesick Texan's recipe (use her fancy shcmancy recipe) which is honest to goodness the best! Try it on your next cold weather night. It pairs well with red wine, a roaring fire, and catching up on Homeland...which we that order.

The next morning was Josh's Birthday!!! YAY!!! The first thing we did to celebrate was to go get our WOD on at CF:

Josh did awesome and Rxed the WOD. Let me tell you was a tough one and I love seeing him do so well and so quickly after his summer on that scooter.

We spent the rest of the day drinking mimosas, soaking in the hot tub (after that workout we needed it), watching football, and then getting ready for our birthday dinner. Normally, Josh and I treat each other to fancy dinners for our birthdays. So two fancy shmancy meals in about 8 days time and this doesn't include Thanksgiving dinner. This year, we decided to save some money (and ease up on our waistbands) by splitting one big meal. It was perfect! We went to Capitol Grille and started out with some cocktails at the bar: Basil Hayden for Josh and a Stoli Doli for me. Then we feasted on calamari, salads, steaks, and coconut cream pie. The icing on the imaginary birthday cake was our bottle of wine: Shafer Relentless which was Wine Spectator's Wine of the Year in 2012. We have both had it before, but it tasted better than ever!

Sunday was cold, icy, and rainy/snowy. I spent the whole day cooking, baking, and organizing. The highlight of my day was eating Tweety Cookies with Alycyn while watching Sex and the City! 
1. Lasagna that I prepped yesterday and will bake tonight.
2. & 3. Healthy Broccoli and Cheese Casserole.
4. Tweety Cookies right out of the oven.
