Great Day For A Royal Wedding

So much has happened in the last 24 hours! OBL is dead as a doornail and the world is Celebrating! It is a great day to be an American!

However, this post is about good 'ol Great Britain and the Royal Family. I am sure all of you are sick to death hearing about Kate and Will...but this is more about some yummy healthy chocolate muffins then their nuptials.

My best buddies and I had a "Royal Wedding Watch Party" starting at 4am on Friday morning. With this early morning wake up call, I thought it was necessary to bring some yummy baked goods to keep us energized and nourished. However, I didn't want them to be chock full of calories...(I was saving those for later and a trip to the Biergarten.) That is where Cooking Light came to the rescue! Their recent issue had a whole spread on muffins...and being the Chocoholic I am the Chocolate-Chocolate Chip Muffins were the obvious choice for the party. Not only were they simple to make, but they were healthy and tasty...or at least I thought they were and all of them were eaten at the party...so I think others think they are good too. They are not very sweet which compliments the chocolate nicely. Try them yourself:

First gather your cast of characters and set your oven to 400 degrees.

Combine dry ingredients.

Then combine all wet ingredients and then gradually add them to the dry mixture. Add mini chips too!

Mix.

Add batter to greased paper tins. Greasing the liners made a huge difference!

Bake for 15 minutes and enjoy! Yummy!

Not only were the muffins a hit, but the wedding was incredible. Look at that dress!
