Yummy Quick and Healthy Weeknight Meal

So I have to give all of the credit for this yummy dinner idea to my boyfriend Josh. He made this for me a few weeks ago, and I was adamant that I did not want it. I like to eat healthy and lately I have been trying to make a better effort of not eating processed foods. Josh loves all things made by Zatarain's, and on this particular evening, he had planned to make me their dirty rice. "I do not want that" I told him. He made it anyway, and it was AMAZING and (much to my surprise...I calculated the calories) healthy. He added a lot of broccoli to the Zatarain's mix which made the dish turn into a meal that reminded me of broccoli-cheese didn't even notice that there was not any cheese in the recipe. Enough is the recipe...try won't regret it...and you will love it!

Zatarain's Dirty Rice w/ Ground Turkey and Broccoli
  • 1 Box of Zatarain's Dirty Rice Mix
  • 2 Large Crowns of Broccoli (cut into smaller sections)
  • 1 lb Ground Turkey
  • Follow the directions on the box
  • When it comes time to cover the rice and meat mixture, add the broccoli to the pan.
  • Cover and simmer for 25 minutes.
  • When 25 minutes has passed, remove from heat and let sit for 5 minutes.
  • Mix thoroughly and enjoy.
From my calculations, one cup of this yumminess is under 200 calories. That is awesome, and it is filling and full of fiber.
