Tuxedo Cake

Back in August I went back to Texas for a family visit. I spent about four days with my Papasito (Mike) and four days with my Mamasita (Toni). During my stay with Toni one of the highlights of the visit was when she made the TUXEDO CAKE. It is a decadent chocolate cake with a whipped cream icing that is also topped with chocolate ganache. Talk about YUMMY! It takes about 6 hours to complete (if not more) because you have to let the cake get firm in the fridge several times. But it is 100% worth it.

First you must make the chocolate cake batter. It is a three layer cake, and as the cakes were baking we licked the mixing bowls clean. This is a must. It is TOO GOOD to let a single drop go to waste!

While the cakes cool, you make the whipped cream icing. The cakes must be COMPLETELY cool before you ice them with the whipped cream so that it does not melt.

We went to dinner while the cakes cooled. Look at Toni's amazing icing technique!

Put the completely iced cake back in the fridge to set and cool some more. During this time make the chocolate ganache. Then pour the glaze on the cake directly in the center and let it pour over the sides.

YUMMY! Chocolate!

It is finished! Doesn't it look delightful?

Finally, get a big glass of milk or a chilled flute of champagne and cut yourself a big piece. You will love every bite!
